Tropical Awesome Oatmeal – Recipe for Steel Cut Oats with Mango, Bananas, and Coconut Oil

Oatmeal with a touch of tropical flavor

In addition to being expensive, cooking for a crowd can also be a lot of work.

This versatile recipe is easy to multiply to fit the size of your crowd and it is not very expensive to make.  I love that you do most of the work the night before and have a delicious and nutritious whole grain breakfast option that is sure to please a crowd.

Since I am in the Florida Keys cooking for www.kayakamelia.com, our local produce and gorgeous weather inspired this recipe.  By adding Coconut Oil, I not only add a delicious cholesterol free flavor, but I also give members of our group plenty of fuel to successfully complete their daily adventures of kayaking and snorkeling.

Tropical Awesome Oatmeal

Steel Cut Oats with Mango, Bananas, and Coconut Oil

Ingredients

Oatmeal:
About 2 TBSP of Coconut Oil
1 cup steel cut oats
4 cups water
¼ tsp salt

Toppings:
Fresh Mango
Fresh banana
Fresh squeezed lime juice
Additional Coconut oil
Brown sugar

Directions

Coat the inside of your slow cooker with the Coconut Oil. Combine remaining oatmeal ingredients and cook on low for 7-8 hours in a slow-cooker, then reduce heat to warm until ready to eat. Stir the oatmeal whenever convenient while it is cooking and add additional water if desired or needed.

When oatmeal is done, dice the fresh fruit (tossing the banana in lime juice to prevent browning) and allow everyone to top their oatmeal however they like it for a hearty, delicious breakfast.
