Classic Hot Cheese Dip

With December upon us, so starts the season of entertaining and parties.  Often we need a quick, economical appetizer idea and it is nice to find one that uses seasonal ingredients.  Onions provide the perfect medium for this cheesy option.  If you want to really mix things up you can top the dip with nuts, add your favorite herb, seafood, or another vegetable.  It is delicious with fresh vegetables, crackers, or chips.

Classic Hot Cheese Dip

Prep Time: 10 minutes

An easy, basic, hot cheese dip recipe that can easily be varied to reflect your favorite flavors.

Ingredients

2 cups diced sweet onion
1/2 cup chopped green onions
1 cup mayonnaise
2 cup grated sharp cheddar cheese
2 TBSP fresh rosemary, minced
Fresh ground black pepper to taste
1/2 cup chopped pecans

Directions

Preheat oven to 350°F.

Combine first 6 ingredients; pour into an oven safe baking dish. Top with nuts. Place in oven and bake for 30 minutes until bubbly and golden. Remove from oven; garnish with fresh parsley, if desired, and serve hot with crackers and fresh vegetables for dipping.

Alternative options:

Hot Crab dip - omit green onions, rosemary, and pecans. Add 1 cup crab meat and 1 tsp hot sauce of choice. Top with crumbled crackers and bake according to instructions.

Blue Walnut dip - Same as for crab but add 1/2 cup blue cheese crumbles instead of crab meat and Montery Jack; instead of cheddar, top with a generous layer of chopped walnuts. Serve with apple and pear slices.

Spinach Onion - Add 2 cups chopped cooked spinach to basic recipe.

Kale Dip - same as for spinach but with kale.

Artichoke Dip - Omit rosemary and substitute mozzarella for the cheddar; add 1 can drained chopped artichokes.
