Cinna-Spicy Winter Squash

I love the cinnamon spice flavor of this dish and my kids love it both hot and cold.  It is even good (if you have any leftover) as breakfast, stirred in with a little oatmeal.   Don’t be intimidated by the cayenne, it only there to enhance the flavor of the cinnamon and you can easily adjust the amount you add if you are worried about picky eaters.  For specific instructions on how to cook winter squash go here.

Cinna-Spicy Winter Squash

This is a delicious and simple way to prepare winter squash. Butternut, acorn, carnival or any other squash can be made using this recipe.

Ingredients

1 medium winter squash
2 TBSP coconut oil
2 tsp local honey
1/2 tsp cinnamon
1/4 tsp salt
pinch of cayenne pepper

Directions

Cook squash until it is tender. Scrape from skin and mash cooked squash. Add remaining ingredients and stir together. For a more elegant presentation place prepared squash mixture back into the scraped shell of the skin. Top with pecans and additional honey, bake long enough to toast the nuts then serve.
