When a good friend told me that there was going to be an online picnic event for the 4th of July I wanted to be a part of it. I adore picnics! There just aren’t enough opportunities to enjoy three of my favorite things at one: food, friends, and the great outdoors! This was
also a great way to get involved with the blog Crock-pot Ladies . They have a lot of great recipes that help make the lives of many busy families a little easier!
This 4th of July my family will be visiting my friend Jeanine in the mountains. Since it is also the 4th is also Jeanine’s birthday I wanted the menu for our picnic to include two of her favorite foods: Bacon and Chocolate. I also know that we’re probably going to have a crowd at our gathering so it needed to be something that wasn’t too difficult to make and that would please picnic-ers of all ages. I decide to make Buffalo Bacon Snackers with fresh veggies and bleu chevre dip and for dessert to do Flag Fondue… not very complicated but very delicious! (I cannot disclose any birthday cake details, that is supposed to be a surprise!)
You’ll find the recipe for the Buffalo Bacon Snackers and Bleu Chevre Spread below, I recommend making extra of the spread and serving it in Individual Edible Dip Bowls. Be sure to check out tomorrow’s blog too- I’ll be posting pointers for how to make the delicious and beautiful 4th Flag Fondue!

- 1 package (12oz) bacon
- 3 TBSP Sriracha
- 2 medium tomatoes, sliced
- 3 cups baby spinach leaves
- 1 recipe Blue Chevre dip (see below)
- 1 package whole wheat Hawaiian rolls
- frill picks or mini flag picks (optional)
- ¼ cup blue chevre (or bleu cheese of choice)
- ¼ cup mayonnaise
- TBSP fresh chives, minced
- ½ tsp fresh ground black pepper

- Preheat oven to 400F. Prepare bacon pan as instructed here

- Use a pastry brush to paint the top of the bacon with the Sriracha.
- Bake for 10-20 minutes, until desired crispness is reached (times will vary with the thickness of the bacon).
- Remove from oven and allow to cool.
- Split open the rolls, spread each with some of the Blue Chevre Spread.
- Top with tomato, spinach, and some of the cooked bacon.

- Mash the bleu chevre with a fork to make a paste.

- Stir in mayonnaise, chives, and pepper to taste.
- Enjoy on sandwiches or as a dip with vegetables.
