Authentic Shortbread Cookie Recipe- Irish/ Scottish Favorite

I love recipes with stories.  This recipe is from my dear friend, Tina, who refuses to cook at home.  She has such fond memories of this recipe, however, that once a year she turns on her oven and bakes these wonderful cookies.  This recipe has been a tradition in her family for generations.  Her grandfather moved to the U.S. from Scotland and was in charge of the gardens at one of the Woolworth’s estates.  (Tina is also a wonderful gardener.)

Ingredients:

  • 1 cup softened butter (2 sticks)
  • ¾ cup powdered sugar
  • 2 cups flour

With your mixer cream butter and sugar together.  Gradually add the flour to form dough.

Place the dough onto a baking sheet lined with parchment paper.  Shape it into a large circle ¾-inch thick.

Tine each circle (prick with your fork); cut into wedges, and place in refrigerator for 30 minutes.

Preheat oven to 375º.  Bake for five minutes at that temperature, then reduce oven to 300º and bake for 45 additional minutes until pale gold.  Cut into wedges where scored, before it cools completely.
